Fennel seed

Fennel seed suppliers and sourcing guide

Fennel seed is the dried, ripe fruit of Foeniculum vulgare, a perennial in the parsley family grown mainly in India, Egypt, China and the Mediterranean. Sweet fennel (var. dulce) is the main culinary type; bitter fennel has more fenchone. Seeds are harvested, dried and cleaned, then sold whole, cracked or ground. Brands buy it for sausage and meat seasonings, baked goods, teas and spice blends, and fennel oil, rich in anethole, for flavors.

Cracked seed for sausage and ground seed for blends.

  • Sweet and bitter types

Sweet fennel for food use and bitter fennel, sold separately, mainly for herbal products.

Steam-distilled oil high in trans-anethole for flavors.

  • Steam-treated and organic

What to check on the COA

Compare each result with your own specification when the lot arrives.

Volatile oil
Volatile oil by steam distillation, the main strength figure.
Anethole and estragole (oil)
Trans-anethole and estragole by GC for fennel oil and extracts.
Moisture
Moisture by distillation or loss on drying.
Total and acid-insoluble ash
Ash by gravimetry; acid-insoluble ash measures sand and soil and is the usual cleanliness check for ground fennel.
Purity and foreign matter
Foreign seeds, stems and extraneous matter by sorting.
Microbiology
Total plate count, yeast and mold, coliforms or E. coli, and Salmonella; raw spices commonly carry high counts, so state whether the lot was steam-treated or otherwise treated.

Storage, lots and expiry

Storage and shelf life

Store fennel seed in sealed, lined bags or containers in a cool, dry, dark area off the floor; heat, light and air drive off volatile oil, and damp storage invites mold and insects. Shelf life is set by the supplier specification, and volatile oil and micro are the usual retests for older stock.

Lots and expiry dates

Color, oil content and type (sweet or bitter) vary by origin and crop, so record type, origin and volatile oil for each lot. Keep sweet and bitter fennel on separate item codes.
