Apple juice concentrate suppliers and sourcing guide

Apple juice concentrate is juice pressed from apples (Malus domestica), clarified with enzymes and filtration, and evaporated to about 70 degrees Brix, with the aroma recovered separately. Forms and grades of apple juice concentrate

Suppliers sell different products under the same name. Specify the one you need.

  • Clear concentrate

Depectinized and filtered concentrate at about 70 Brix, the standard grade for juices and sweetening.

  • Cloudy concentrate

Concentrate that keeps some suspended solids for a fresh-pressed look in drinks.

  • Low-acid and high-acid grades

Grades with different malic acid levels to match flavor targets.

  • Decolorized or deionized

Concentrate treated to remove color and minerals so it acts mainly as a fruit-based sweetener.

  • Organic

Organic concentrate, often from European or Chinese fruit.

What to check on the COA

Compare each result with your own specification when the lot arrives.

Brix and acidity
Soluble solids by refractometer and titratable acidity as malic acid, which set dilution and taste.
Color and clarity
Absorbance and turbidity (NTU) for clear grades, with a haze or stability test.
Patulin
Patulin by HPLC, a mold toxin associated with damaged or moldy apples.
Inorganic arsenic and metals
Inorganic arsenic by LC-ICP-MS and lead by ICP-MS, compared after reconstitution to single strength.
Microbiology
Yeast and mold, plate count and Alicyclobacillus, an acid-tolerant spoilage organism.

Storage, lots and expiry

Storage and shelf life

Store concentrate refrigerated or frozen in drums or totes, depending on the supplier's instructions, and keep it closed to prevent moisture pickup and contamination. Shelf life is set by the supplier's specification, and older stock is checked for color, Brix and micro before use.

Lots and expiry dates

Acidity, color and flavor vary by apple variety, origin and season, so record certificate values per drum or tank and blend to hit a target. Keep patulin and arsenic results for each lot, and rotate first in, first out.
