Sweet whey powder
Sweet whey powder suppliers and sourcing guide
Sweet whey powder is the dried liquid left after the curd is separated from milk in making rennet-set cheeses such as cheddar and mozzarella. The whey is pasteurized, concentrated and spray dried, often after a crystallization step so the lactose does not make the powder sticky. It is mostly lactose with some whey protein and minerals, and brands use it in baked goods, confections, snack seasonings, drink mixes and dairy blends.

Forms and grades of sweet whey powder
Suppliers sell different products under the same name. Specify the one you need.
Non-hygroscopic
Whey pre-crystallized before drying so the lactose is stable and the powder flows freely.
Standard spray-dried
Regular whey powder, cheaper but more prone to caking in humid conditions.
Reduced-lactose and demineralized
Modified wheys with part of the lactose or minerals removed, covered by their own GRAS sections.
Whey permeate blends
Lower-protein dairy solids sold as alternatives; check the name on the spec.
Organic
Whey from certified organic cheesemaking.
What to check on the COA
Compare each result with your own specification when the lot arrives.
- Protein, fat, lactose and ash
- Protein by Kjeldahl, fat, lactose by HPLC or polarimetry, and ash, checked against the composition ranges in the spec.
- Moisture
- Moisture by oven drying, usually under about 4%.
- Titratable acidity and pH
- Titratable acidity as lactic acid and pH, which separate sweet whey from acid whey.
- Scorched particles and color
- Scorched particle disc and color, which reflect drying conditions.
- Microbiology
- Standard plate count, coliforms, Salmonella, and yeast and mold.
Storage, lots and expiry
Storage and shelf life
Store sealed in multiwall bags in a cool, dry place with low humidity, because whey powder cakes readily and browns in warm storage. Keep it off the floor and away from odors. Shelf life is set by the supplier, often 12 to 18 months, and older stock can be retested for moisture and color.
Lots and expiry dates
Composition and color vary with the cheese type and plant, so record protein, lactose, ash and acidity for each lot. Rotate stock first-expired, first-out and watch for caking in humid months.
Regulatory status
