Bamboo fiber
Bamboo fiber suppliers and sourcing guide
Bamboo fiber is an insoluble fiber made from the stems (culms) of bamboo, not from the shoots eaten as a vegetable. The stalks are chipped, cooked or treated with alkali, usually bleached, then washed, dried and milled into a white, nearly flavorless powder that is mostly cellulose with some hemicellulose and lignin. Food makers buy it to add fiber, hold water and replace part of the flour, choosing by fiber length and whiteness.

Forms and grades of bamboo fiber
Suppliers sell different products under the same name. Specify the one you need.
Short-fiber powder grades
Finely milled grades for smooth doughs, coatings and drink mixes, where long fibers would feel gritty.
Long-fiber grades
Longer fibers that hold more water and add structure in meat, bakery and extruded products.
Bleached (white) grades
Peroxide-bleached to a bright white color with little flavor; the most common food grade.
Unbleached grades
Natural tan color, made without bleaching; used where color is not an issue.
What to check on the COA
Compare each result with your own specification when the lot arrives.
- Total dietary fiber
- Total, soluble and insoluble fiber by AOAC 991.43 or 2011.25, reported on an as-is or dry basis.
- Moisture
- Loss on drying; affects flow, caking and microbial stability.
- Particle size or fiber length
- Sieve analysis or laser diffraction to confirm the grade.
- Water binding capacity
- Grams of water held per gram of fiber, the main functional spec for bakery and meat use.
- Heavy metals
- Lead, arsenic, cadmium and mercury by ICP-MS.
- Microbiology
- Total plate count, yeast and mold, coliforms or Enterobacteriaceae, E. coli and Salmonella.
Storage, lots and expiry
Storage and shelf life
Bamboo fiber is a stable dry powder; keep it in sealed multiwall bags in a cool, dry area off the floor and away from strong odors. Re-seal opened bags, since the fiber picks up moisture from the room. Suppliers set a best-before date from manufacture for unopened packaging.
Lots and expiry dates
Fiber length, whiteness and water binding can change between lots and suppliers, which changes dough water absorption, so record those values from each COA. Note the bamboo species and country of origin and whether the lot is bleached.
Regulatory status

What forms of bamboo fiber can brands buy?
Common forms include short-fiber powder grades, long-fiber grades, bleached (white) grades and unbleached grades. Ask each supplier for the specification sheet of the exact grade they quote.
What should the COA for bamboo fiber include?
Expect total dietary fiber, moisture, particle size or fiber length, water binding capacity, heavy metals and microbiology, each with its method, specification and result for that lot.
How should bamboo fiber be stored?
Bamboo fiber is a stable dry powder; keep it in sealed multiwall bags in a cool, dry area off the floor and away from strong odors. Re-seal opened bags, since the fiber picks up moisture from the room. Suppliers set a best-before date from manufacture for unopened packaging.
