Blueberry powder
Blueberry powder suppliers and sourcing guide
Blueberry powder is made from cultivated highbush blueberries (Vaccinium corymbosum) or wild lowbush blueberries (Vaccinium angustifolium), either by freeze-drying or air-drying whole fruit and milling it, or by spray-drying juice or puree with a carrier. Whole-fruit powders keep the skins, which hold most of the purple color; juice powders are finer and more soluble. It is used for color and flavor in drink mixes, bars, yogurts and baked goods.

Forms and grades of blueberry powder
Suppliers sell different products under the same name. Specify the one you need.
Freeze-dried whole fruit
Whole berries freeze-dried and milled, 100 percent fruit, deep purple.
Spray-dried juice powder
Juice or puree dried with maltodextrin or another carrier, soluble for beverages.
Wild blueberry powder
Made from lowbush berries from Maine and eastern Canada, sold as a distinct origin.
Standardized grades
Powders or extracts sold with a declared anthocyanin content measured by HPLC or pH-differential.
Organic
Certified organic powders, freeze-dried or air-dried.
What to check on the COA
Compare each result with your own specification when the lot arrives.
- Identity and fruit content
- Fruit solids versus carrier and species (highbush or wild), with sensory comparison to a standard.
- Anthocyanins
- Total anthocyanins by pH-differential or HPLC when a level is declared or color strength matters.
- Moisture and water activity
- Loss on drying and water activity to prevent caking.
- Microbiology
- Total plate count, yeast and mold, coliforms or Enterobacteriaceae, E. coli and Salmonella; low-moisture foods that are eaten without a cooking step need a negative Salmonella result per lot.
- Pesticides and metals
- Multi-residue pesticide screen by GC-MS/MS and LC-MS/MS, plus lead and cadmium by ICP-MS.
Storage, lots and expiry
Storage and shelf life
Store sealed in moisture- and light-barrier bags in a cool, dry place; the color fades and the powder cakes if exposed to heat, light or humidity. Shelf life is set by the supplier's specification, and older lots are checked for color, moisture and caking before use.
Lots and expiry dates
Color strength and acidity vary by species, crop and drying run, so record anthocyanin or color data and moisture per lot. Rotate first in, first out, and match lots when color consistency matters.
