Coconut milk powder
Coconut milk powder suppliers and sourcing guide
Coconut milk powder is coconut milk or cream, pressed from grated coconut kernel (Cocos nucifera), that has been spray dried. Because the fat is high, most powders contain a carrier such as maltodextrin, and many also contain sodium caseinate (a milk protein) to hold the fat; dairy-free grades use other carriers such as acacia gum. Brands use it in curry and soup mixes, drink mixes, plant-based creamers, desserts and bakery.

Fat levels
Powders at around 50 to 70 percent fat, sold by fat content.

What to check on the COA
Compare each result with your own specification when the lot arrives.
- Fat content
- Fat by acid hydrolysis or Soxhlet, the main value and price driver.
- Moisture
- Moisture by oven drying, usually a few percent.
- Free fatty acids and peroxide value
- Free fatty acids and peroxide value, which flag rancidity.
- Allergen statement
- Whether milk (sodium caseinate) is present, confirmed on the spec and allergen statement.
- Microbiology
- Standard plate count, yeast and mold, coliforms, E. coli and Salmonella.
Storage, lots and expiry
Storage and shelf life
Store sealed in moisture-barrier packaging in a cool, dry place below about 25 °C, because the high fat content can go rancid and the powder cakes in heat and humidity. Keep it away from strong odors and use opened bags quickly. Shelf life is set by the supplier, often 12 to 18 months, and older stock should be checked for rancidity before use.
Lots and expiry dates
Fat level, carrier and flavor vary by supplier and lot, so record fat, moisture and the carrier used for each lot. Confirm on every new lot whether the powder contains caseinate, since this changes allergen labeling.
