- Dextrose equivalent
- DE by the Lane-Eynon titration or an equivalent reducing-sugar method, reported against the grade range; it is the main specification for function.
- Moisture
- Loss on drying, usually with a maximum of about 6% in supplier specifications; higher moisture leads to caking.
- pH, ash and sulfated ash
- pH of a solution, plus ash, which reflects residual salts from neutralization and refining.
- Bulk density and particle size
- Loose and tapped bulk density and sieve analysis, which affect flow, blend uniformity and fill weights.
- Heavy metals
- Lead, arsenic, cadmium and mercury by ICP-MS against the supplier specification or the buyer's own limits.
- Microbiology
- Total plate count, yeast and mold, coliforms or E. coli, and Salmonella. Starches are dry and low in water activity, but buyers using them uncooked in powders or tablets check micro on every lot.
