Tapioca maltodextrin

Tapioca maltodextrin suppliers and sourcing guide

Tapioca maltodextrin is maltodextrin made from cassava (tapioca) starch instead of corn. The starch is partly hydrolyzed with enzymes, refined and spray dried to a white powder sold by dextrose equivalent (DE). Brands choose it over corn maltodextrin for corn-free, non-GMO or organic labels, and it is also used to turn oils into powders. Some low-density grades are sold specifically for absorbing fats in culinary use.

Forms and grades of tapioca maltodextrin

Suppliers sell different products under the same name. Specify the one you need.

  • Standard spray-dried grades

DE 10 to 18 powders used as carriers and bulking agents in drink mixes, flavors and supplements.

  • Low-density grades

Very light, low-DE powders that absorb oil and are used to make oil and fat powders.

  • Organic

Made from certified organic tapioca starch; one of the more common organic maltodextrin sources.

  • Non-GMO

Tapioca grades sold as non-GMO, sometimes third-party verified.

What to check on the COA

Compare each result with your own specification when the lot arrives.

Dextrose equivalent
DE by Lane-Eynon titration or an equivalent reducing-sugar method, reported against the grade range.
Moisture
Loss on drying against the supplier maximum; higher moisture causes caking.
Bulk density
Loose and tapped bulk density, especially for low-density oil-absorbing grades.
Residual cyanide and SO2
Some buyers ask for cyanide and sulfur dioxide results because of the cassava source.
Heavy metals
Lead, arsenic, cadmium and mercury by ICP-MS against the supplier specification or the buyer's own limits.
Microbiology
Total plate count, yeast and mold, coliforms or E. coli, and Salmonella. Starches are dry and low in water activity, but buyers using them uncooked in powders or tablets check micro on every lot.

Storage, lots and expiry

Storage and shelf life

Store sealed in lined bags in a cool, dry room, away from odors and off the floor. Like other maltodextrins it is hygroscopic and cakes after exposure to humid air, so reseal opened bags promptly. Shelf life is set by the supplier specification, and older stock is retested for moisture and micro.

Lots and expiry dates

DE, moisture and bulk density vary within a grade's range from lot to lot. Record them per lot along with the organic or non-GMO certificate, and check bulk density when the maltodextrin is used to absorb oil.

Regulatory status

Facts from regulators and standards bodies, each linked to its source.

  • 21 CFR 184.1444 describes maltodextrin as prepared by partial hydrolysis of corn starch, potato starch, or rice starch; tapioca starch is not among the sources named in that section.

What should the COA for tapioca maltodextrin include?

Expect dextrose equivalent, moisture, bulk density, residual cyanide and SO2, heavy metals and microbiology, each with its method, specification and result for that lot.

How should tapioca maltodextrin be stored?

Store sealed in lined bags in a cool, dry room, away from odors and off the floor. Like other maltodextrins it is hygroscopic and cakes after exposure to humid air, so reseal opened bags promptly. Shelf life is set by the supplier specification, and older stock is retested for moisture and micro.
