- Mogroside V assay
- Mogroside V percentage by HPLC against a reference standard; this is the potency figure the grade is sold on and drives sweetness and use level.
- Identity
- HPLC fingerprint or TLC confirming the mogroside profile matches Siraitia grosvenorii and is not cut with other sweeteners.
- Heavy metals
- Lead, arsenic, cadmium and mercury, usually by ICP-MS, since botanical extracts concentrate what the fruit takes up from soil.
- Microbiology
- Total plate count, yeast and mold, coliforms or E. coli, and Salmonella to confirm the extract is fit for food use.
- Moisture and ash
- Loss on drying and total ash, which affect flow, caking and how much of the powder is actually sweetener.
- Pesticide and solvent residues
- Pesticide residue screening, and residual solvents if ethanol or other solvents were used during purification.
- Solubility and particle size
- Mesh size or a solubility check, relevant for dry blending and for clear beverages.
