Pomegranate juice concentrate
Pomegranate juice concentrate suppliers and sourcing guide
Pomegranate juice concentrate is juice pressed from pomegranate fruit (Punica granatum) and concentrated by evaporation, usually to around 65 Brix. Whole fruit or separated arils are pressed, and the juice is depectinized, filtered and concentrated, with aroma often recovered and added back. Main producing areas include Turkey, Iran, India, Spain and California; it is used in juices, drink mixes, sauces and confectionery.

Forms and grades of pomegranate juice concentrate
Suppliers sell different products under the same name. Specify the one you need.
Clarified concentrate
Depectinized and filtered, around 65 Brix; the common grade for drinks.
Aril-only versus whole-fruit pressing
Whole-fruit pressing extracts more tannin from peel and membrane, giving a more astringent juice.
Not-from-concentrate (NFC) juice
Single-strength juice, usually frozen or aseptic.
Pomegranate juice powder
Concentrate spray-dried with a carrier such as maltodextrin.
Organic
From certified organic pomegranates.
What to check on the COA
Compare each result with your own specification when the lot arrives.
- Brix and acidity
- Soluble solids by refractometer and titratable acidity as citric acid; they set the dilution rate and taste.
- Color
- Absorbance or colorimeter values for the red anthocyanin color, which browns with heat and time.
- Authenticity
- Anthocyanin and sugar profiles by HPLC and other markers, since pomegranate juice has a history of dilution with cheaper juices.
- Microbiology
- Yeast and mold, total plate count and acid-tolerant spoilage organisms.
- Pesticide residues and patulin
- Multi-residue screen and, where specified, mycotoxin checks.
Storage, lots and expiry
Storage and shelf life
Store concentrate frozen or chilled as the supplier specifies; color browns quickly at warm temperatures. Keep drums and bag-in-box closed and use opened containers promptly. Shelf life follows the supplier's spec for the format and temperature.
Lots and expiry dates
Color, acidity and tannin vary by variety, origin and pressing method, so record origin, Brix and acidity per lot. Ask for authenticity testing when changing suppliers, and rotate first-expiring lots first (FEFO).
