White grape juice concentrate
White grape juice concentrate suppliers and sourcing guide
White grape juice concentrate is juice pressed from light-skinned grapes (Vitis vinifera varieties such as Thompson Seedless, Muscat or Airen), clarified, detartrated and evaporated to about 68 degrees Brix, with aroma often recovered. Spain, Argentina, South Africa and California are large suppliers. Brands use it as a mild fruit base and sweetener in juice blends, juice drinks, sorbets, jams, snacks and bars.

Forms and grades of white grape juice concentrate
Suppliers sell different products under the same name. Specify the one you need.
Standard concentrate
Clarified, detartrated concentrate at about 68 Brix, the usual grade for juice blends.
Rectified or deionized
Concentrate stripped of color, acids and minerals so it acts mainly as a fruit-sugar sweetener.
Muscat or aromatic
Concentrate from aromatic varieties, chosen for flavor rather than neutrality.
Organic
Organic concentrate, mostly from Spain, Italy or Argentina.
What to check on the COA
Compare each result with your own specification when the lot arrives.
- Brix and acidity
- Soluble solids by refractometer and titratable acidity as tartaric acid.
- Color and clarity
- Absorbance and turbidity, and a cold-stability test for tartrate haze.
- Sulfites
- Sulfur dioxide by Monier-Williams or a similar method, since grape must is sometimes sulfited before concentration.
- Ochratoxin A and metals
- Ochratoxin A by HPLC and lead by ICP-MS.
- Microbiology
- Yeast and mold, plate count and Alicyclobacillus.
Storage, lots and expiry
Storage and shelf life
Store concentrate refrigerated or frozen as the supplier directs, closed and protected from contamination; warm storage darkens it. Shelf life is set by the supplier's specification, and older stock is checked for color, Brix and micro before use.
Lots and expiry dates
Acidity, color and flavor vary by variety and vintage, so record certificate values and grape origin per lot. Note any declared sulfite level on the lot record for allergen and labeling review, and rotate first in, first out.
