Waxy maize starch
Waxy maize starch suppliers and sourcing guide
Waxy maize starch is starch from waxy corn hybrids whose kernels contain almost entirely amylopectin, the branched form of starch, with very little amylose. It is produced by the same wet-milling process as regular corn starch. With little amylose, cooked pastes are clear and less likely to set into a gel or weep on cooling and freezing. Brands buy native waxy maize as a thickener, as the base for many modified food starches, and as a carbohydrate in sports drink powders.

Forms and grades of waxy maize starch
Suppliers sell different products under the same name. Specify the one you need.
Native
Unmodified waxy maize starch that must be cooked to thicken.
Pregelatinized
Cooked and dried waxy maize that thickens in cold liquids.
Physically modified (functional native)
Heat-treated grades that resist breakdown in processing and can be labeled as starch rather than modified starch.
Non-GMO
Waxy corn grades from identity-preserved non-GMO hybrids.
What to check on the COA
Compare each result with your own specification when the lot arrives.
- Amylose content
- Amylose by iodine binding or colorimetric method, which confirms the waxy type.
- Moisture
- Loss on drying against the specification.
- Viscosity profile
- Paste viscosity by RVA or Brabender, which shows cooking and holding behavior.
- pH and ash
- pH of a slurry and ash, which reflect refining.
- Heavy metals
- Lead, arsenic, cadmium and mercury by ICP-MS against the supplier specification or the buyer's own limits.
- Microbiology
- Total plate count, yeast and mold, coliforms or E. coli, and Salmonella, which matter most when the ingredient goes uncooked into powders, capsules or tablets.
Storage, lots and expiry
Storage and shelf life
Store sealed in a cool, dry area off the floor and away from odors, since starch absorbs both moisture and smells. Shelf life is set by the supplier, often with retest of moisture and micro for aged stock.
Lots and expiry dates
Viscosity and moisture vary by lot and affect thickening and fill weight. Record viscosity per lot and keep non-GMO documentation per lot if you make that claim.

What forms of waxy maize starch can brands buy?
Common forms include native, pregelatinized, physically modified (functional native) and non-GMO. Ask each supplier for the specification sheet of the exact grade they quote.
What should the COA for waxy maize starch include?
Expect amylose content, moisture, viscosity profile, pH and ash, heavy metals and microbiology, each with its method, specification and result for that lot.
How should waxy maize starch be stored?
Store sealed in a cool, dry area off the floor and away from odors, since starch absorbs both moisture and smells. Shelf life is set by the supplier, often with retest of moisture and micro for aged stock.
