Cordyceps

Cordyceps suppliers and sourcing guide

Cordyceps in the ingredient trade covers several fungi. Wild Ophiocordyceps sinensis, the caterpillar fungus of the Tibetan plateau, is scarce and very costly, so most supply is either Cordyceps militaris fruiting body cultivated on grain or liquid media, or fermented mycelium of anamorph strains such as Paecilomyces hepiali (often sold as CS-4). These are sold as powders and hot-water extracts specified by cordycepin, adenosine or beta-glucans.

Forms and grades of cordyceps

Suppliers sell different products under the same name. Specify the one you need.

  • Cordyceps militaris fruiting body

Cultivated fruiting bodies, dried whole or milled, or extracted; specified by cordycepin and adenosine.

  • Fermented mycelium (CS-4)

Mycelium of Paecilomyces hepiali or similar strains grown in liquid fermentation; specified by adenosine, mannitol or polysaccharides.

  • Mycelium on grain

Mycelium grown on rice or oats and dried with the substrate, which adds starch.

  • Hot-water extract

Extract of fruiting body or mycelium, sold on beta-glucans or polysaccharides.

  • Wild Ophiocordyceps sinensis

Wild-collected fungus and larva, sold in small volumes at high prices; substitution is common.

What to check on the COA

Compare each result with your own specification when the lot arrives.

Species identity (DNA barcoding)
ITS sequencing or a similar DNA method to confirm which fungus is in the lot; the label name alone is not reliable.
Cordycepin and adenosine (HPLC)
Cordycepin (mainly in C. militaris) and adenosine by HPLC.
Beta-glucans (enzymatic)
Beta-glucans by an enzymatic method, with alpha-glucan (starch) reported for grain-grown products.
Heavy metals
Lead, arsenic, cadmium and mercury by ICP-MS; wild O. sinensis has had arsenic findings.
Microbiology
Total plate count, yeast and mold, E. coli and Salmonella.

Storage, lots and expiry

Storage and shelf life

Keep powders and extracts sealed, cool and dry; extracts are hygroscopic. Reseal opened containers and limit time open. Shelf life or retest date comes from the supplier.

Lots and expiry dates

The species and growth method define what you are buying, so put them on the spec and confirm by DNA when changing suppliers. Record species, part, growth substrate and supplier lot.

Frequently asked questions

What forms of cordyceps can brands buy?

What should the COA for cordyceps include?

Expect species identity (DNA barcoding), cordycepin and adenosine (HPLC), beta-glucans (enzymatic), heavy metals and microbiology, each with its method, specification and result for that lot.

How should cordyceps be stored?

Keep powders and extracts sealed, cool and dry; extracts are hygroscopic. Reseal opened containers and limit time open. Shelf life or retest date comes from the supplier.
