Turkey tail mushroom

Turkey tail mushroom suppliers and sourcing guide

Turkey tail is Trametes versicolor (also sold as Coriolus versicolor), a bracket fungus that grows in tiered, banded shelves on dead hardwood. The tough, leathery fruiting body is not eaten whole, so the trade is in dried, milled fruiting body, hot-water extracts of it, and mycelium grown on grain. Extracts are usually sold with a declared beta-glucan or polysaccharide percentage.

Forms and grades of turkey tail mushroom

Suppliers sell different products under the same name. Specify the one you need.

  • Fruiting body powder

Dried Trametes versicolor fruiting bodies milled to a powder, with nothing extracted or concentrated. Sold by mesh size; polysaccharide content is whatever the raw mushroom carries.

  • Hot-water extract

Fruiting bodies extracted in hot water, concentrated and spray dried, usually sold with a minimum beta-glucan or polysaccharide percentage and a declared extract ratio.

  • Dual extract

A water extract combined with an ethanol extract of the same material, for products that want both water-soluble polysaccharides and alcohol-soluble compounds. Residual ethanol belongs on the COA.

  • Mycelium on grain

Mycelium grown on a grain substrate such as oats or rice and dried with the substrate. The grain stays in the powder, so starch is high and beta-glucan is lower than in fruiting body material.

  • Organic

Fruiting body powder or extract made from certified organic cultivated or wild-harvested material, with the organic certificate tied to the lot.

What to check on the COA

Compare each result with your own specification when the lot arrives.

Identity
Macroscopic and microscopic examination, HPTLC fingerprint or DNA barcoding to confirm Trametes versicolor and the part used (fruiting body or mycelium).
Beta-glucan and alpha-glucan (enzymatic)
Beta-glucan measured by an enzymatic kit method (such as the Megazyme mushroom and yeast beta-glucan assay), with alpha-glucan reported alongside to show starch from grain substrate. A total polysaccharide figure by UV-Vis does not separate the two.
Heavy metals
Lead, arsenic, cadmium and mercury by ICP-MS. Mushrooms take up metals from their growing substrate, so each lot is checked against the buyer's limits.
Microbiology
Total plate count, yeast and mold, coliforms, E. coli and Salmonella.
Pesticide residues
Multi-residue screen by GC-MS/MS and LC-MS/MS, required for organic material and commonly asked for on conventional lots.
Physical tests
Loss on drying, particle size or mesh, and bulk density; for extracts, the extract ratio, carrier and residual ethanol if a solvent was used.

Storage, lots and expiry

Storage and shelf life

Keep powders and extracts sealed in lined fiber drums or foil bags in a cool, dry place away from light. Hot-water extracts are hygroscopic and cake when exposed to humid air, so reseal opened containers promptly. Shelf life or a retest date comes from the supplier's specification, and the glucan assay is usually repeated at retest.

Lots and expiry dates

Beta-glucan, alpha-glucan and metals vary with strain, substrate and harvest, so check each lot's COA against your specification instead of a typical value. Record whether the lot is fruiting body or mycelium on grain, the extract ratio and any carrier, and keep the supplier lot traceable to finished batches.

Frequently asked questions

What forms of turkey tail mushroom can brands buy?

Common forms include fruiting body powder, hot-water extract, dual extract, mycelium on grain and organic. Ask each supplier for the specification sheet of the exact grade they quote.

What should the COA for turkey tail mushroom include?

Expect identity, beta-glucan and alpha-glucan (enzymatic), heavy metals, microbiology, pesticide residues and physical tests, each with its method, specification and result for that lot.

How should turkey tail mushroom be stored?

Keep powders and extracts sealed in lined fiber drums or foil bags in a cool, dry place away from light. Hot-water extracts are hygroscopic and cake when exposed to humid air, so reseal opened containers promptly. Shelf life or a retest date comes from the supplier's specification, and the glucan assay is usually repeated at retest.

What is the regulatory status of turkey tail mushroom?

Health Canada's Mushrooms natural health product monograph lists Trametes versicolor (turkey tail) with cultured mycelium, fruiting body and mycelium as the permitted parts. The EU Novel Food status Catalogue entry for Trametes versicolor (POL-NF-00751) gives the whole mushroom the status not yet authorised novel food.
