Calcium caseinate
Calcium caseinate is casein neutralized with a calcium base. Acid casein is precipitated from pasteurized skim milk, washed, then reacted with calcium hydroxide or calcium carbonate and spray dried. It is about 90% protein, disperses in water to an opaque, milky liquid rather than dissolving clear, and is less soluble and more heat stable than sodium caseinate. It is used in protein powders, bars, creamers and baked goods, and as a lower-sodium caseinate option.
Suppliers sell different products under the same name. Specify the one you need.
Fine powder for powders, drinks and creamers.
Grades with thinner solution viscosity for high-protein drinks and bars.
Lecithin-coated powder that wets faster in shakes.
Tighter micro and specification limits for medical nutrition and supplement use.
Compare each result with your own specification when the lot arrives.
Keep sealed, cool and dry, away from odors; the powder cakes if it takes up moisture. Shelf life comes from the supplier's specification, and older lots are usually retested for moisture, micro and sensory before use.
Record protein, calcium and viscosity for each lot, since dispersion and texture in drinks can shift between lots. Rotate first-expired, first-out.

Suppliers are in alphabetical order and none pays to appear. Each claim is checked against the supplier’s own website on the date shown. Ask for the specification sheet and a recent COA before you order, and confirm details with the supplier.
Common forms include spray-dried, low-viscosity grade, instantized and nutritional grade. Ask each supplier for the specification sheet of the exact grade they quote.
Expect protein (Kjeldahl or Dumas), calcium and pH, moisture, fat, ash and lactose, microbiology and heavy metals, each with its method, specification and result for that lot.
