Whey Protein Isolate
Whey protein isolate is the protein fraction of cow's milk whey, the liquid left after cheesemaking, purified to roughly 90% protein or more on a dry basis. It is made by membrane filtration (micro- and ultrafiltration) or by ion-exchange chromatography, which strip out most of the lactose and fat, and is then spray-dried. Whey protein concentrate is the less purified grade, and whey protein hydrolysate is whey protein partly broken into peptides with enzymes.
Suppliers sell different products under the same name. Specify the one you need.
About 90% protein or more on a dry basis with very low fat and lactose. Sold as membrane-filtered or ion-exchange material, which differ in protein fraction profile and flavor.
Less purified whey protein, sold at protein levels from the mid-30s up to about 80%. Carries more lactose and fat and costs less than isolate.
Whey protein treated with enzymes to a specified degree of hydrolysis. Used in sports and medical nutrition; hydrolysis tends to add bitterness.
Agglomerated with a small amount of lecithin so the powder wets and disperses quickly in shakes. The lecithin source (soy or sunflower) affects allergen labeling.
Isolates designed to stay clear and heat-stable in acidified ready-to-drink beverages and protein waters.
Grass-fed, rBST-free or organic whey, backed by supplier documentation or certificates rather than by a lab test.
Compare each result with your own specification when the lot arrives.
Keep sealed in a cool, dry area away from strong odors; whey powders absorb moisture and smells, and humidity causes caking. Over time, fat oxidation and Maillard browning slowly change flavor and color, faster at higher temperatures. Shelf life comes from the supplier's spec or COA and runs from the manufacture date, not the date stock arrived.
Protein percentage shifts slightly between lots, so calculate protein per serving from each lot's COA and keep a margin above the label claim. For instantized grades, record the lecithin source on every lot because it changes the allergen statement. Track manufacture dates and use FEFO, since flavor drift shows up in finished products before the powder is out of date.
Facts from regulators and standards bodies, each linked to its source.
Whey protein concentrate is affirmed as GRAS at 21 CFR 184.1979c, which defines it by protein content and requires production by physical separation such as filtration.

Suppliers are in alphabetical order and none pays to appear. Each claim is checked against the supplier’s own website on the date shown. Ask for the specification sheet and a recent COA before you order, and confirm details with the supplier.
Common forms include whey protein isolate (WPI), whey protein concentrate (WPC), whey protein hydrolysate (WPH), instantized, clear or acid-stable isolate and sourcing-based grades. Ask each supplier for the specification sheet of the exact grade they quote.
Expect protein content, composition: moisture, fat, ash and lactose, amino acid profile, microbiology, heavy metals and physical properties, each with its method, specification and result for that lot.
