Sodium caseinate

Sodium caseinate suppliers and sourcing guide

Sodium caseinate is casein made water soluble. Casein is precipitated from pasteurized skim milk with acid (acid casein), washed, then neutralized with sodium hydroxide and spray or roller dried. The result is a powder of about 90% protein that dissolves readily and is widely used as an emulsifier, whitener and protein source in coffee creamers, processed meats, bars, nutrition drinks and cheese analogs.

Forms and grades of sodium caseinate

Suppliers sell different products under the same name. Specify the one you need.

  • Spray-dried

Fine powder that dissolves quickly; the common grade for drinks and creamers.

  • Roller-dried

Coarser powder with different flavor and solubility, used in some meat and bakery applications.

  • Low-viscosity and high-viscosity grades

Grades sold by solution viscosity, chosen to fit emulsions, coatings or drinks.

  • Pharmaceutical or nutritional grade

Grades made to tighter micro and specification limits for medical nutrition and supplement use.

What to check on the COA

Compare each result with your own specification when the lot arrives.

Protein (Kjeldahl or Dumas)
Total nitrogen times 6.38, typically around 88 to 92% on a dry basis.
pH and sodium
pH of a 5% solution (usually near neutral) and sodium content, which matters for sodium labeling.
Moisture, fat, ash and lactose
Proximate analysis to confirm a clean caseinate.
Viscosity and solubility
Viscosity of a standard solution and insoluble matter, the main functional specs.
Microbiology
Total plate count, coliforms, yeast and mold, Salmonella and Staphylococcus.
Heavy metals
Lead and other metals by ICP-MS against food or supplement limits.

Storage, lots and expiry

Storage and shelf life

Store sealed in a cool, dry place away from strong odors. Caseinate is fairly stable as a dry powder, but moisture causes caking and warm storage causes off-flavors over time. Shelf life is set by the supplier's specification, with a retest for aged stock.

Lots and expiry dates

Record protein, pH and viscosity for each lot, since viscosity differences change emulsion and drink texture. Note the drying method and rotate first-expired, first-out.

Regulatory status

Facts from regulators and standards bodies, each linked to its source.

This is general information, not regulatory advice. Status differs by country and by how the ingredient is used, so check the rules for your product and market.

Sodium caseinate suppliers

Manufacturers and distributors whose own websites say they sell it.

  • Actus Nutrition

    Manufacturer · Eden Prairie, MN

US dairy ingredient maker, formerly Milk Specialties Global, producing whey proteins, milk protein concentrates and isolates, and caseins and caseinates for food and nutrition brands.

Suppliers are in alphabetical order and none pays to appear. Each claim is checked against the supplier’s own website on the date shown. Ask for the specification sheet and a recent COA before you order, and confirm details with the supplier.

Frequently asked questions

What forms of sodium caseinate can brands buy?

Common forms include spray-dried, roller-dried, low-viscosity and high-viscosity grades and pharmaceutical or nutritional grade. Ask each supplier for the specification sheet of the exact grade they quote.

What should the COA for sodium caseinate include?

Expect protein (Kjeldahl or Dumas), pH and sodium, moisture, fat, ash and lactose, viscosity and solubility, microbiology and heavy metals, each with its method, specification and result for that lot.

How should sodium caseinate be stored?

Store sealed in a cool, dry place away from strong odors. Caseinate is fairly stable as a dry powder, but moisture causes caking and warm storage causes off-flavors over time. Shelf life is set by the supplier's specification, with a retest for aged stock.

What is the regulatory status of sodium caseinate?

21 CFR 182.1748 lists sodium caseinate as generally recognized as safe when used in accordance with good manufacturing practice. 21 CFR 135.110 lists sodium caseinate among the optional caseinates that may be added to ice cream mix containing not less than 20 percent total milk solids.
